Vegan Wellington

A hearty, healthy, and delicious vegan wellington to enjoy with family and friends. A meal complete in itself. Would be perfect with a side dish of fresh salad!

Ingredients

  • 2 carrots, diced small
  • 250 grams of organic mushrooms, finely chopped
  • 450 grams of organic chickpeas, boiled. (canned can be used)
  • 100 grams of whole walnuts, unsalted (ground into a course meal)
  • ¼ cup almond flour
  • ¼ cup oats
  • ½ medium onion, diced or you may substitute with celery stalk, diced
  • 1 ½ tbsp tamari sauce
  • 2 tbsp organic ground flax meal mixed well with 5 tablespoons water
  • 2 tbsp tomato paste
  • 1- 2 tbsp vegan butter, melted
  • 1 – 2 tbsp avocado oil or coconut cooking oil
  • 2 tsp dried thyme
  • 2 tsp ground sage
  • 1 tsp dried rosemary
  • 1 tsp sea salt, add more to taste
  • 1 tsp cracked pepper, to taste
  • 1 sheet vegan puff pastry, approx. 30 cms x 20 cms)

Directions

  1. Oil the baking tin and preheat the oven to 200°C / 400°F. (You may use organic Avocado oil because of its neutral flavor or coconut cooking oil).
  2. Heat oil in a skillet over medium heat. Add onion or celery, with carrots. Sauté until softened about 6 minutes.
  3. Add thyme, sage, and rosemary. Sauté for about 1 minute. Next, add in diced mushrooms and sauté until they soften. After approx. 5 minutes when all their moisture has been released and evaporated, add tamari and cook for about 1 minute. Once done, remove from heat and set aside.
  4. Add the boiled chickpeas to a large bowl and mash just enough to leave lots of their texture.
  5. Next, add together the cooled sautéed mixture, walnut meal, flax mixture, tomato paste, salt, and pepper and mix them well together.
  6. Use your hands to shape the mixture into a solid log and place it in the middle of the pastry sheet, which is already placed on the baking tray. Wrap the pastry sheet from the sides onto the mixture log. If the pastry sheet doesn’t overlap and seal easily, just lightly brush any non-dairy milk onto the edges to seal.
  7. Brush lightly the top and sides with melted vegan butter. Using a sharp knife, make diagonal crisscross slits across the whole top of the loaf.
  8. Finally, place in the preheated oven for approx. 30 minutes until cooked throughout and the pastry is golden brown.
  9. Let sit for 15 minutes. Cut into slices to serve. Enjoy!
