- 4 sheets of tapioca-rice
- 1 cup sprouted red beans
- 1/2 cup cooked quinoa
- 1/2 cup blanched kale
- 1/2 cup finely chopped boiled tofu
- 1/4 cup chopped coriander leaves
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- 1/2 tbsp white sesame
- 1/4 tsp evaporated cane sugar
In a bowl mix quinoa, sprouts, kale, tofu and coriander leaves together and keep aside.
Mix all the seasoning in a separate small bowl and pour over the quinoa mixture and mix well.
Dip the sheets in a bowl of water and spread out on a plate. Take two spoonful of the filling and spread on the edge of the sheet and wrap into a roll. Cut the wrap as per your desired size.
Serve with salad and any sauce of your choice
Quinoa can be replaced with couscous
