Ingredients
- 6- 8 ripe tomatoes, cored. (About half a kilogram)
- 1 ½ cups fresh parsley leaves
- 1 ½cups of onions chopped
- 3-5 green fresh chilies
- 1 ½ tbsp vinegar
- 1 ½ tbsp fresh lemon juice
- 1 ½ tbsp pomegranate molasses
- 1 tbsp extra virgin olive oil
- 1 ½ tsp black pepper, grounded
- 1 ½ tsp Himalayan salt
- If you prefer you may add some maple syrup or honey
Directions:
- Place all ingredients in a food processor. Pulse 8 – 10 times until an evenly chopped texture is formed.
- Serve at room temperature or chill in fridge to serve later.
Notes:
- Onions can be replaced with cucumber
- Pomegranate molasses can be made at home too, with pomegranate juice, sugar and lemon juice
