Ingredients
- 1 cup of raw chopped broccoli (If you prefer you may steam it)
- 1 avocado
- ½ cup shredded red cabbage
- ½ cup cherry tomatoes cut in half
- ½ cup boiled chopped sweet potatoes
- ½ cup alfalfa sprouts (or sprouts of your choice)
- ½ cup cooked quinoa or brown rice
Ingredients for dressing
- 3 tbsps water
- 1 ½ tbsps tahini
- 1 ½ tbsps fresh lemon juice
- 1 tbsp extra virgin olive oil
- ½ tsp maple syrup or raw honey
- sea salt to taste
Directions:
- Blend the dressing ingredients in a processor until smooth and creamy.
- Place the vegetables in a bowl and drizzle with the dressing and enjoy!
Notes:
- If you want to eat later keep in the fridge without mixing the dressing.
- Pour the dressing just before eating to avoid your salad becoming soggy.
- You can always add your favorite nuts and seeds to your Buddha bowl.
