Tomato Peanut Chutney

Yields

4 -6 servings

Ingredients

  • 2 cups chopped tomatoes
  • 1/3 cup roasted peanuts
  • 1 or 2 red or green chilies
  • 2 tsp roasted sesame seeds
  • ½ bunch of fresh coriander leaves
  • 1 tbsp coconut cooking oil or olive oil
  • sea salt to taste
  • pinch of black pepper, grounded

Directions:

  • Heat oil in a pan and sauté the tomatoes, chilies and the peanuts. Leave aside to cool
  • Blend together all the ingredients in a blender into a creamy texture
  • Water may be added if you prefer a slightly more liquid consistency

Enjoy with your main meal, as a salad dressing or a dip
