Ingredients
- 4 cups chopped cucumber
- ½ cup coarsely grounded roasted peanuts
- 1 or 2 green chilies chopped or complete as per your preference
- 1 tbsp cooking coconut oil, or olive oil or ghee
- 1 tsp mustard seeds
- 1 lemon’s freshly squeezed juice
- ½ tsp turmeric powder
- sea salt to taste
Directions:
- Heat oil in a pan and put in the mustard seeds. Once the seeds start popping put in the turmeric powder, sea salt, chilies and saute for just under a minute. Switch off the heat
- Put into the pan the cucumber, peanuts, lemon juice and mix well
- Pour into your serving dish and enjoy warm
- Can also be stored in a fridge and enjoyed cool
Notes:
Peanuts can be substituted with almonds or/and walnuts
