Orange Raisin Wheatless Vegan Cake

Ingredients For The Cake

  • 1 big orange
  • 1 cup rye flour
  • 1 cup oats flour
  • 1 cup raisins
  • ¾ cup of soy milk or nut milk of your choice
  • ¹⁄3 cup of walnuts or nuts of your choice
  • ¼ cup of coconut cooking oil
  • ¼ cup of jaggery or dates paste
  • 1 tsp baking soda

Ingredients For The Topping

  • 1 big orange
  • ¹⁄3 cup dates paste
  • ½ cup finely chopped walnuts
  • 1 tbsp instant oats

Directions For The Cake:

  1. Grate the skin of the orange and keep the zest aside
  2. Blend the orange, zest, walnuts, raisins, jaggery, oil, and milk together to a fine paste
  3. Sieve the dry ingredients and mix together with the wet ingredients to form the batter
  4. Oil the baking tin and preheat the oven to 175°C / 350°F
  5. Pour the batter into the baking tin and bake for 45 minutes

Directions For The Topping:

  1. Grate the zest of the orange and keep aside
  2. Juice the orange and cook the juice on low heat
  3. Add dates paste, zest to the juice and cook for few minutes
  4. Add the instant oats and keep stirring till it thickens
  5. Add the finely chopped walnuts
  6. Once the cake is baked remove it from the oven
  7. Prick the top with a fork and pour the warm topping onto the cake
  8. Enjoy warm or cool in the fridge and enjoy
