Ingredients For The Cake
- 1 big orange
- 1 cup rye flour
- 1 cup oats flour
- 1 cup raisins
- ¾ cup of soy milk or nut milk of your choice
- ¹⁄3 cup of walnuts or nuts of your choice
- ¼ cup of coconut cooking oil
- ¼ cup of jaggery or dates paste
- 1 tsp baking soda
Ingredients For The Topping
- 1 big orange
- ¹⁄3 cup dates paste
- ½ cup finely chopped walnuts
- 1 tbsp instant oats
Directions For The Cake:
- Grate the skin of the orange and keep the zest aside
- Blend the orange, zest, walnuts, raisins, jaggery, oil, and milk together to a fine paste
- Sieve the dry ingredients and mix together with the wet ingredients to form the batter
- Oil the baking tin and preheat the oven to 175°C / 350°F
- Pour the batter into the baking tin and bake for 45 minutes
Directions For The Topping:
- Grate the zest of the orange and keep aside
- Juice the orange and cook the juice on low heat
- Add dates paste, zest to the juice and cook for few minutes
- Add the instant oats and keep stirring till it thickens
- Add the finely chopped walnuts
- Once the cake is baked remove it from the oven
- Prick the top with a fork and pour the warm topping onto the cake
- Enjoy warm or cool in the fridge and enjoy
