Crunchy Roasted Nutmeg Chickpeas

Ingredients

  • 2 cup chickpeas (cooked and dried)
  • 4-5 tsp maple syrup or raw honey
  • 3-4 tsp extra virgin olive oil
  • 1 tsp nutmeg powder
  • ½ – 1 tsp cinnamon powder
  • ¼ – ½ black pepper
  • ¼ – ½ cayenne pepper
  • ¼ – ½ sea salt (optional)

Directions:

  1. In a bowl mix the olive oil into the chickpeas.
  2. In a 175°C/350°F preheated oven place the chickpeas on the parchment-lined baking sheet and bake for about 50 minutes. Midway give the chickpeas a shake to roast evenly.
  3. Remove from the oven when done. Place in a bowl and add in the remaining ingredients and mix well with a spoon.
  4. Bake for another 10-15 minutes to get the flavors of the spices well into the chickpeas.
  5. When done garnish with your favorite herbs and serve immediately to enjoy them hot, or you may savor them later when they have cooled off.
