Coconut yogurt is a great alternative for people who are allergic to lactose or do not prefer dairy products. Coconut meat is loaded with essential vitamins, minerals, phytonutrients, and lots of fiber. It is high in medium-chain fatty acids which are a great source of quick energy.

Ingredients
- 2 medium-size fresh coconuts
- ½ cup water
- 2 tbsp fresh lemon juice (optional)
- 2 probiotic capsules
Directions:
- Remove the meat from the fresh coconut
- In a blender blend the coconut meat, water, and lemon at high speed till smooth and creamy
- Pour the coconut blended mixture into a glass jar
- Open and pour the contents of the probiotic capsules into the coconut mixture and stir well with a wooden or plastic spoon
- Secure the top of the glass container with a cheesecloth and rubber band. Place the container in a warm place and let it sit for about 12 – 18 hours depending on the weather. In cold climates, longer fermentation time is required.
- After about 12 -14 hours taste with a wooden or plastic spoon. When well fermented it will have a tangy taste.
- Once fermented remove the cheesecloth from the glass and close it with the lid and place in the fridge.
Notes:
You can enjoy it plain, or add a natural sweetener like raw honey or maple syrup. You can add fruits, seeds and/or nuts and enjoy it as a healthy pudding.
If fresh coconut is not available you can try with coconut milk.
