Vegan Jackfruit Cutlets

Jackfruit has recently become the “Jack of all fruits”. Its demand has soared during the last few months. Many people have become a bit reluctant to consume meat from the COVID scare. They have switched over to jackfruit as it has a texture very similar to meat. Its popularity has soared in vegan and vegetarian menus.
It is the largest tree fruit in the world. It is high in magnesium, vitamin B6, vitamin C, fiber, and phytonutrients, including lignans, isoflavones, and saponins. Its seeds are also used in cooking. The seeds, too, contain lots of nutritional benefits and are boiled, roasted, or ground into flour.

Ingredients

  • 2 cups jackfruit cooked and shredded
  • 1 cup potatoes boiled and mashed
  • 1 cup bread crumbs or finely crushed corn flakes
  • ½ cup raw cabbage finely shredded
  • 2 green chilies chopped
  • 2 tbsp rice flour, cornflour, potato flour or arrowroot flour
  • 1-2 tbsp cooking coconut oil, ghee or olive oil
  • 1 tbsp ginger finely chopped
  • ¼ tsp coriander powder
  • ¼ tsp cumin powder
  • ¼ tsp mango powder
  • ¼ tsp turmeric powder
  • ¼ tsp cayenne powder
  • Sea salt to taste
  • Small bunch of fresh coriander finely chopped or local seasonal herbs of your preference
  • Oil for shallow frying

Directions:

  1. Heat 1-2 tablespoons of oil in a pan and add ginger, green chilis, cabbage, and salt. Sauté for a few minutes.
  2. Add turmeric powder, coriander powder, cumin powder, cayenne powder, mango powder, and stir well.
  3. Add the cooked shredded jackfruit, mashed potatoes, fresh coriander, and mix well. Cook for about 2 minutes.
  4. Once the mixture cools down make eight balls and press into cutlet shapes and keep aside.
  5. In a bowl put the 2 tbsp flour of your choice, add water to it to form a batter semi-liquid.
  6. In a pan heat oil for frying the cutlets.
  7. Dip the cutlet into the flour batter and then roll it in the breadcrumbs or cornflake-crumbs and shallow fry until golden brown.
  8. Remove the fried cutlets onto a plate lined with a kitchen towel or unbleached paper towels. Serve hot and enjoy.

Notes:

The tender jackfruit can be steamed or boiled. Once cooled shred or mince the jackfruit pieces in a food processor or shred it with a fork or a knife.

You may use canned jackfruit if fresh raw is unavailable. Canned jackfruit will need less cooking time. Wash before use to drain off the brine.

If you do not want to shallow fry you can cook in air fryer. Reduce the size of the cutlets for cooking in the air fryer.
