Barley Mushroom Soup

Ingredients

  • 2 cups of vegetable stock
  • 2 shitake mushrooms, chopped (or any local seasonal fresh mushrooms)
  • 2 tbsp barley powder
  • 1 – 2 tbsp celery, chopped
  • 1 tbsp ginger, finely chopped
  • 1 tbsp coconut cooking oil
  • Himalayan salt to taste
  • black pepper to taste

Directions:

  1. Lightly fry the ginger in a heavy pot and add barley powder.
  2. Add vegetable stock and shitake mushrooms.
  3. Add Himalayan salt and cook for 20 minutes till done.
  4. Serve hot seasoned with pepper and celery.
