Ingredients
- 2 cups of vegetable stock
- 2 shitake mushrooms, chopped (or any local seasonal fresh mushrooms)
- 2 tbsp barley powder
- 1 – 2 tbsp celery, chopped
- 1 tbsp ginger, finely chopped
- 1 tbsp coconut cooking oil
- Himalayan salt to taste
- black pepper to taste
Directions:
- Lightly fry the ginger in a heavy pot and add barley powder.
- Add vegetable stock and shitake mushrooms.
- Add Himalayan salt and cook for 20 minutes till done.
- Serve hot seasoned with pepper and celery.
