Thai Khao Soi Curried Coconut Soup with Tofu and Veggies

Ingredients:

  • Ready mix of Khao Soi spices, approx. 35g (Brand used for this recipe is “Lobo Khao Soi Seasoning Mix”)
  • 1 big size potato, boiled and cut into cubes, optional
  • ½ block of extra firm tofu, chopped into pieces
  • 1 ½ cup coconut milk
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 3 – 4 tbsp soy sauce
  • Bunch of fresh cilantro, chopped

Directions:

  1. In a 400°F / 200°C preheated oven,  bake the tofu pieces for about 15 minutes.
  2. Meanwhile, heat a large skillet over medium heat, add in half a cup of coconut milk and the ready seasoning mix. Stir and mix well until the seasoning mix flavors are released.
  3. Add broccoli, carrots, soy sauce and Sauté about 3 minutes.
  4. Next add in the baked tofu and potato cubes and sauté for 1-2 minutes.
  5. Add in the remaining 1 cup of coconut milk and water as per your preferred consistency. Cook on medium heat for 2-3 minutes until it comes to a boil. Lower heat to low heat and let simmer for approx. 10 minutes.
  6. Taste and adjust spices, salt or sugar to adjust to your preference.
  7. Remove from heat, add in the chopped cilantro, cover and let sit for few minutes.
  8. Serve with rice or noodles.
