Ingredients:
- Ready mix of Khao Soi spices, approx. 35g (Brand used for this recipe is “Lobo Khao Soi Seasoning Mix”)
- 1 big size potato, boiled and cut into cubes, optional
- ½ block of extra firm tofu, chopped into pieces
- 1 ½ cup coconut milk
- 1 cup broccoli florets
- 1 cup sliced carrots
- 3 – 4 tbsp soy sauce
- Bunch of fresh cilantro, chopped
Directions:
- In a 400°F / 200°C preheated oven, bake the tofu pieces for about 15 minutes.
- Meanwhile, heat a large skillet over medium heat, add in half a cup of coconut milk and the ready seasoning mix. Stir and mix well until the seasoning mix flavors are released.
- Add broccoli, carrots, soy sauce and Sauté about 3 minutes.
- Next add in the baked tofu and potato cubes and sauté for 1-2 minutes.
- Add in the remaining 1 cup of coconut milk and water as per your preferred consistency. Cook on medium heat for 2-3 minutes until it comes to a boil. Lower heat to low heat and let simmer for approx. 10 minutes.
- Taste and adjust spices, salt or sugar to adjust to your preference.
- Remove from heat, add in the chopped cilantro, cover and let sit for few minutes.
- Serve with rice or noodles.
