Ingredients:
- ¼ cup masoor dal, washed, soaked for 3 hours and drained
- ¾ cup split moong dal, washed, soaked for 3 hours and drained
- 6-8 cups of baby spinach, chopped (or any seasonal leafy greens of your choice)
- 2 cup tomatoes, chopped
- 2 green chilies, slit
- 2 inch fresh ginger, finely grated
- 1 tsp red chili powder (optional)
- 2 tsp sea salt (or as preferred)
- 2 tsp coriander powder
- 2 tsp sambar powder
- 2 tsp avocado or coconut cooking oil
- ½ tsp mustard seeds
- ½ tsp turmeric powder
- ½ tsp cumin seeds
- ½ tsp asafoetida (hing)
- A bunch of fresh coriander leaves, chopped, for garnishing
Directions:
- Heat oil in a pan and add in the mustard and cumin seeds, Let the mustard seeds crackle. Next add in the green chillies and ginger and saute until done.
- Now add in the red chilli powder, sea salt, turmeric powder and stir for a few seconds until flavored. Sprinkle some water if necessary to prevent spices from burning.
- Next add the chopped tomatoes and cook until they become soft and mushy. Now add in the coriander and sambar powder. Add some water if required.
- Add the soaked and drained dal to the pan and mix everything together. Add water to adjust your preferred consistency. Simmer on medium heat, cover with lid until it comes to a boil and simmer for another 3-5 minutes on low heat until well done.
- Finally add in the spinach leaves, mix well and cover lid and simmer on low heat for 3-5 minutes.
- When done, garnish with coriander leaves and serve.
Notes:
- You can make this in an instant pot too.
- Saute all ingredients besides the dal and spinach. When spices and tomatoes are sauteed, add in the daal and cover the daal well with water.
- Pressure cook for 2 minutes, and quick release immediately when done.
- Next add in the spinach leaves and cook on saute mode for another 3-5 minutes for the spinach leaves to blend in well.
