Instant Pot Potato French Beans Curry

Potatoes are a good source of carbohydrates, vitamins, and minerals, including vitamin C, vitamin B6, and potassium. They also contain antioxidants. French beans are low in calories but rich in fiber, vitamins (such as vitamin C and vitamin K), and minerals (like potassium and iron). Incorporating both into your curry adds nutritional value and enhances flavor. Enjoy!

Ingredients:

  • 4 cups of French beans cut into 2-inch lengths
  • 4 cups of baby potatoes halved, or 2-3 medium-sized potatoes, diced
  • 2  cups finely chopped tomatoes
  • 2 tbsp tomato paste
  • 2 inch ginger finely chopped
  • 2 tbsp coriander powder
  • 2 tsp mustard seeds
  • 2 tsp cumin seeds
  • 2 tsp Himalayan salt or as per preference
  • ½ tsp curcumin
  • ½ tsp black pepper
  • 1-2 green chilies, sliced in half
  • ½ – 1 tsp cayenne pepper (optional)
  • 3 tbsp coconut cooking oil or avocado cooking oil
  • 1 bunch of chopped fresh coriander leaves

Directions:

  1. Heat the oil in the pot.
  2. Add the cumin seeds and mustard seeds. Once the cumin seeds begin to brown and the mustard seeds begin to pop, add the ginger and chilies (or cayenne pepper). Stir well until done. Add some water if necessary to avoid burning.
  3. Add the rest of the spices and stir well for a few minutes until everything is fragrant. Add some water if necessary to avoid burning.
  4. Then add the tomatoes and stir-fry for 4-5 minutes, or until they begin to form a paste-like consistency.
  5. Add the green beans and potatoes. Give everything a good mix, then add ½ – 1 cup water or adjust to your desired gravy consistency.
  6. Secure the lid, close the pressure valve, and cook for 2 minutes at high pressure. (The time may differ, please check the instructions of your Instant Pot.)
  7. Open the valve to quick release the pressure.
  8. Garnish with chopped coriander.

Serve with brown rice, chapati, or bread, or enjoy on its own.
