3-4 servings (8 – 10 tablespoons)
Ingredients
- 2 cups of fresh basil leaves
- ¼ cup of pine nuts
- ¼ cup grated parmesan cheese
- ¼ cup of extra virgin olive oil
- 1-2 tbsp of water
- 1 ½ tbsp of lemon juice
- pinch of black pepper
- pinch of sea salt
Directions:
- In a food processor blend all the ingredients adding in the olive oil gradually to attain a smooth consistency. Ensure that the olive oil has mixed in well.
- You may add in more sea salt, black pepper or lemon as per your preference
- Enjoy straight away or pour in a bottle with lid and keep in the fridge. Can be stored in the fridge for up to 4 days.
Notes:
- No pine nuts, replace with walnuts or almonds.
- Vegans can replace the parmesan with vegan cheese.
- Enjoy it with your pasta, or as a dip with anything you fancy!
