Beet Lentil Veggie Patties

These hearty, flavorful patties combine the wholesome goodness of green lentils and beets, making them a nutritious and satisfying option.

Green lentils are packed with plant-based protein, fiber, and essential minerals like iron, which support muscle health, digestion, and energy levels.

Beets are rich in antioxidants and nitrates, which have been shown to improve heart health by helping to lower blood pressure and enhance blood flow. The nitrates in beets may also support better exercise performance and stamina. Additionally, beets help reduce inflammation and are a great source of vitamins and minerals.

Ingredients:

  • 4 medium-sized beets, peeled and cut into cubes
  • ½ cup green lentils (le puy lentils, not the mung lentils)
  • ½ cup walnuts, chopped
  • ½ cup basil leaves, chopped
  • ¼ cup ground flax seed
  • ½ tsp sea salt or as per preference
  • 1 tsp smoked paprika powder
  • 1 tsp cumin powder
  • 1 tsp black pepper
  • 1 tsp lemon powder
  • ½ tsp cayenne pepper

Directions:

  1. To save time, cook the green lentils and steam the beets together in the Instant Pot. Set the Instant Pot to high pressure for 8 minutes, then perform a quick release. You can adjust the cooking method to your preference.
  2. Once the lentils and beets have cooled, combine them with the other ingredients. Pulse everything in a food processor until you achieve a coarse mixture.
  3. Shape the mixture into patties, about 5 inches in diameter, and place them onto a parchment-lined baking sheet.
  4. Preheat the oven to 350°F (176°C). Bake the patties in the preheated oven for 20 minutes, flipping them midway through the cooking time if necessary.
  5. Once done, enjoy the patties as a burger, in a sandwich, or however you prefer. Top with a drizzle of your choice (e.g., tahini, yogurt, or your favorite sauce).
