Vegan Gluten-Free Coconut Cookies

You need only three ingredients to make these cookies. Coconut meat is packed with healthy fats i.e., medium-chain fatty acids and lots of fiber. Moreover, they are great for ones who wish to have eggless and gluten-free cookies. You can enjoy these simple cookies without guilt; they will keep you feeling full and satisfied.

Preheat oven to 350°F / 177°C

Yields

12 servings

Ingredients 

  • 2  cups of shredded unsweetened coconut meat
  • ¼ cup of unsweetened coconut milk
  • 2 tbsp of evaporated cane sugar (jaggery)

Directions:

  • Pour the ingredients into a bowl and mix into a sticky batter
  • one by one make 12 round balls and press them into round flat cookie shapes
  • Place the cookies on the baking tray keeping distance in between them
  • Bake in a preheated 350°F / 177°C oven for 15 -20 minutes until they turn golden brown around the edges
  • Allow to cool and serve and enjoy

Notes:

In place of cane sugar (jaggery) you may try raw honey or dates (blended into a pulp with some water)

If you are a lover of essential oils and have them handy at home you can add a drop of sweet orange or lemon, just a drop, and the flavor of the cookies will be great! Just be sure the essential oils are 100% pure and natural.
