Thai Pomelo Peanut Coconut Salad

Ingredients

  • ½ pomelo, peeled and roughly cut into pieces
  • 4 tbsp unsweetened desiccated coconut, roasted
  • 3 tbsp peanuts, roasted and coarsely crushed
  • 1 tsp powdered brown sugar
  • 1 tsp fresh lime juice
  • 1 tsp Himalayan salt
  • 1 tsp chili flakes

Directions:

  1. Place pomelo in a large bowl
  2. In a small bowl put all the balance ingredients and mix well
  3. Pour the mixed ingredients over the pomelo, toss the pomelo pieces lightly to have ingredients mixed evenly with the pomelo

  • Serve chilled or at room temperature
