Rainbow Salad

Eating daily a multi-colored salad of fruits and vegetables provides immense benefits to your health. Different colors signify different phytonutrients. Anthocyanins and lycopene have antioxidant properties, and they impart the red, purple, and blue color. The compounds that give orange and yellow color are called carotenoids, helping improve your immune function. Beta-carotene is a carotenoid that your body uses to create vitamin A. Chlorophyll gives green fruits and vegetables their color. White fruits and vegetables get their color from polyphenol compounds with antioxidant properties called anthoxanthins.

2 – 4 servings

Ingredients for salad

  • ½ cup of shredded purple cabbage
  • ½ cup of shredded white cabbage
  • ½ cup of grated carrots
  • ½ cup of chopped tomatoes
  • ½ cup of chopped cucumber
  • ½ cup of chopped green apple
  • ½ cup of sunflower sprouts or sprouts of your choice

Ingredients for dressings

  • 2 lemons freshly squeezed
  • ½ tsp light soy sauce
  • ¼ tsp evaporated cane sugar (jaggery) or ½ tsp raw honey
  • fresh ground pepper to taste

Directions:

  • Put all salad ingredients in a bowl
  • In a small bowl mix the dressings ingredients together
  • Pour the dressing onto the salad and mix well
