Quinoa Peanut Butter Salad

5 – 6 servings

Salad Ingredients:

  • 1 cup quinoa
  • ½ red cabbage, chopped
  • 3 tomatoes, chopped
  • 2 bell peppers, chopped
  • 1 big cucumber, chopped
  • 1 little gem lettuce, chopped

Dressing Ingredients:

  • ¾ cup peanut butter
  • ¼ cup honey or brown sugar
  • ¼ cup ginger, grated
  • 1 lemon or lime, freshly juiced
  • 2 tbsp soy sauce
  • 1 tsp chili powder


  1. Boil quinoa, drain and keep aside till cool
  2. When quinoa has cooled, mix all ingredients in a big bowl and let it sit for at least 20 minutes in the fridge
  3. Before serving garnish with freshly chopped green chilies and freshly chopped coriander


  • You can also add grated carrots and spring onions
