Chia Cucumber Lime Fresca

It is now time to lead a healthy life, better to avoid the artificially sweetened carbonated drinks. Here is a refreshing Fresca recipe loaded with vitamins, minerals, omega 3 and fiber!

Yields

4 – 6 servings

Ingredients

  • 4 cups of plain water
  • 3 cups of grated peeled cucumber
  • ½ cup of freshly squeezed lime juice
  • ¼ cup of chia seeds
  • 2 – 4 tbsp grated fresh ginger
  • Raw honey or maple syrup to taste

Directions:

  1. Pour 2 cups water, 2 cups of grated cucumber and grated ginger in a blender and blend well
  2. With a fine-mesh strainer strain out the blended water
  3. In a container pour the blended water, remaining 2 cups of plain water, remaining 1 cup of grated cucumber, lime juice, raw honey or maple juice, chia seeds and stir well
  4. Allow to stand for 10 minutes until chia seeds expand
  5. Serve over ice in a tall glass and enjoy

Notes:

  • Option 2 – Replace the cucumber with a bunch of mint leaves
  • Option 3 – Enjoy with three ingredients only, i.e. chia seeds, lime juice, and water. Ginger optional. Add honey to taste
