Beetroot Hummus

Beetroots are high in inorganic nitrate, which converts to nitric oxide in the body. Nitric oxide relaxes and dilates blood vessels; hence it is excellent for cardiovascular health benefits. It is a high source of folate (folic acid), which is very important as it helps the body make new cells, specifically by playing a role in copying and synthesizing DNA the genetic material. Folate deficiency can be a cause of anemia. Pregnant and breastfeeding women, people with a compromised liver, on kidney dialysis can end up with folate deficiency. Foods rich in folate like beetroot, support a healthy pregnancy, and ward off diseases with cell replication dysfunctions like cancer. Chickpeas are a great source of fiber and protein. So enjoy this recipe where you get the benefits of both of them together.

Ingredients

  • 1 beetroot cooked and chopped
  • ¾ cup of cooked chickpeas
  • 1 or 2 lemons freshly squeezed
  • 2 tbsp sesame seeds
  • 1 tbsp ground cumin
  • 1 tbsp extra virgin olive oil
  • ½ tsp sea salt
  • 2 tbsp tahini (optional)

Directions:

  • Cook the beetroot in boiling water for 30-40 minutes until tender. A knife should go in easily. Once cool remove skin and chop into small pieces. The beetroots can also be cooked in an oven
  • Cook the chickpeas in boiling water for about 20 minutes. You can use ½ tsp baking soda to make them very soft. Drain and keep them aside
  • You may also use the cooked chickpeas from a can
  • In a blender blend the chickpeas. Add the chopped beetroots and blend further. Add in the rest of the ingredients except the sesame seeds and blend until you attain your desired consistency. You may add some ice-cold water if necessary for a smooth creamy texture
  • Garnish with the sesame seeds and any other local fresh herbs or spices you fancy
  • Serve and enjoy with whatever you fancy

Notes:

If the skin of the chickpeas is removed before blending you can get a super creamy smooth texture!
