Don’t throw away your overripe bananas, here is an easy recipe for you to make delicious healthy banana bread at home.

Blend your overripe bananas in a blender and keep a cupful of the blended puree ready

4 -6 servings
Dry Ingredients
- 1 cup of whole wheat flour
- ¾ cup of oats flour
- ¼ cup of black raisins
- ¼ cup chopped walnuts
- ¼ cup of chopped almonds
- 2 tsp of baking powder
- ½ tsp of baking soda
- ½ tsp cinnamon powder
- ½ tsp freshly ground nutmeg powder
- ¼ tsp sea salt
Wet Ingredients
- 1 cup of pureed overripe banana
- ½ cup of plain any non-dairy milk like soy milk or almond milk or milk of your preference
- ¼ cup of evaporated cane sugar (jaggery) mixed in ½ cup of water or ¼ cup of pure maple syrup
- 1 tsp of pure vanilla extract
- butter or cooking coconut oil for greasing the baking pan
Directions:
- Mix the dry ingredients, without the raisins, almonds, and walnuts in a bowl
- In another bowl mix together the wet ingredients
- Add the wet mixture to the dry mixture and mix well together
- Add in the raisins, almonds, and walnuts to the mixture
- Brush a loaf pan with butter or coconut cooking oil
- Pour the batter into the pan and bake in a preheated 350°F / 177°C oven for 50 minutes until it turns golden brown
- Insert a toothpick to check if the loaf is cooked well, the extracted toothpick be clean
Notes:
If you have pure cinnamon essential oil, the cinnamon powder can be replaced with just one drop. You can also try other flavors like a drop of lemon essential oil or a drop of orange sweet essential oil. They are great flavors. The essential oils must be 100% pure.
To make muffins instead of a bread loaf, pour the mixture into muffins cups and bake for 20
