Ingredients
- For vegetables
1 cup of chopped broccoli
½ cup of chopped carrots
1 big tomato chopped
- White bean feta
1 ½ cups of boiled white beans
2 tsp of oregano
2 tsp of lemon juice
2 tsp of apple cider vinegar
¼ tsp sea salt
black pepper to taste
- Chickpea batter
1 cup of chickpea flour
¾ cup of soy milk
1 tbsp ground flax seeds
- 1 tbsp white sesame seeds (optional)
½ tsp sea salt
½ tsp cayenne pepper
½ tsp baking powder
½ tsp mustard powder
½ tsp extra virgin olive oil
Directions:
- Add all the white bean feta ingredients into a bowl, mix and mash the beans a bit and let it sit for 5 minutes
- In another bowl mix all the chickpea batter ingredients, add water if required
- Mix the feta mixture and the chickpea batter together
- Add the chopped vegetables to the above mixture
- Pour into a greased pie pan and bake in a preheated 350 °F / 177 °C oven for 50 minutes till the edges are slightly brown
Notes:
You may add ½ cup of chopped tofu
