Ingredients
- 2 cups chopped spinach
- 1 cup chopped kale
- 1 block hard tofu chopped into squares
- 2 tomatoes pureed
- 2 tbsp oats flour
- 1 inch minced ginger
- 1 green chili chopped
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- Sea salt to taste
Directions:
- Boil the spinach & kale with a little sea salt
- Blend them with ginger, green chili and add oats flour
- Roast the tofu cubes in a pan and remove to a plate
- Pour the tomato puree onto the pan, stir & add coriander powder, cumin powder, turmeric &
chili powder - Add the pureed spinach onto the pan and cook for 5 to 10 minutes till well blended together
with rest of the ingredients - Add sea salt to taste
- When done add roasted tofu and serve hot
- Can be served with roti, rice or bread
