Spinach Tofu Curry

Ingredients

  • 2 cups chopped spinach
  • 1 cup chopped kale
  • 1 block hard tofu chopped into squares
  • 2 tomatoes pureed
  • 2 tbsp oats flour
  • 1 inch minced ginger
  • 1 green chili chopped
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • Sea salt to taste

Directions:

  1. Boil the spinach & kale with a little sea salt
  2. Blend them with ginger, green chili and add oats flour
  3. Roast the tofu cubes in a pan and remove to a plate
  4. Pour the tomato puree onto the pan, stir & add coriander powder, cumin powder, turmeric &
    chili powder
  5. Add the pureed spinach onto the pan and cook for 5 to 10 minutes till well blended together
    with rest of the ingredients
  6. Add sea salt to taste
  7. When done add roasted tofu and serve hot
  8. Can be served with roti, rice or bread
