Almond Milk

Ingredients

  • ½ cup raw almonds soaked in water overnight
  • 2 cups of water
  • 2-3 pitted dates
  • ¼ tsp vanilla extract
  • ¼ tsp cardamon powder
  • pinch of cinnamon powder

Directions:

  1. Drain and rinse the soaked raw almonds. Remove the skin
  2. In a blender churn the water, almonds, and dates for a minute at high speed
  3. In a container strain out the milk using a cheesecloth
  4. Add to the milk cinnamon, vanilla, and cardamon extracts and whisk in well
  5. Avoid the above extracts if you wish to enjoy plain almond milk

Notes:

Refrigerate milk in an airtight glass container for 3-4 days. Milk can also be used for any other recipes. The leftover pulp can be added in oatmeals, smoothies, and dips. Or use as dessert crumbles and sweetmeats. The leftover pulp can be made into an almond meal by baking or roasting it dry. Blend the dry almond meal in a food processor into a fine powder.
